Ingredients

  • Barnyard millet – 50 g
  • Sugar – 50 g
  • Jaggery – 30 g
  • Milk – 500 ml
  • Saffron – a few strands
  • Cashew nuts – 2 tablespoons
  • Almonds – 2 tablespoons
  • Pistachios – 2 tablespoons
  • Cardamom powder – ½ teaspoon
  • Ghee – 2 tablespoons

Preparation Method

Step 1: Cook Millet

  1. Wash and cook barnyard millet in a 1:4 ratio of water for about 5–7 minutes until half cooked.

Step 2: Boil Milk

  1. In another pan, boil milk for 10–15 minutes on medium flame.

Step 3: Combine

  1. Add the cooked millet and saffron to the boiling milk.
  2. Cook for another 10–15 minutes until the millet becomes soft.

Step 4: Sweetening

  1. Add sugar and jaggery.
  2. Stir gently until everything blends well.

Step 5: Garnishing

  1. Heat ghee in a small pan.
  2. Add cashews, almonds, and pistachios.
  3. Roast until golden brown.
  4. Add the roasted dry fruits along with ghee to the payasam.
  5. Add cardamom powder and mix well.

Step 6: Serve

  1. Serve hot or chilled as desired.
