Pearl millet flour creates sturdy sev strands that fry evenly and stay crisp.
Pearl millet flour – 60 g
Roasted bengal gram flour (besan) – 40 g
Hing (asafoetida) – 1 g
Turmeric powder – 1 g
Salt – 2 g
Water – as required
Oil – for deep frying
Prepare the Dough
In a bowl, combine pearl millet flour, roasted bengal gram flour, salt, hing, and turmeric powder. Mix well.
Gradually add water to form a smooth, soft dough.
Heat the Oil
Heat oil in a deep pan over medium flame for frying.
Fill the Sev Maker
Fill the sev maker with a portion of the prepared dough.
Press & Fry
Once the oil is sufficiently hot, press the sev maker directly over the oil, allowing the dough to fall in thin strands.
Fry Evenly
Gently turn the sev using a slotted spoon for even frying. Fry until the oil stops sizzling and the sev turns light golden brown.
Drain & Cool
Remove the sev and transfer to absorbent paper to drain excess oil. Allow it to cool completely.
Serve as tea-time snack
Use as topping for chaat or poha
Store in airtight container for 7–10 days
