Barnyard Millet Gobi 65 is a flavorful and crunchy snack prepared using cauliflower coated with barnyard millet flour and spices. This recipe offers a healthier alternative to traditional Gobi 65 by incorporating millet flour, which adds nutritional value and improves digestion.

Ingredients

  • Barnyard millet flour – 60 g
  • Cauliflower (gobi) – 100 g (cut into florets)
  • Corn flour – 20 g
  • Red chilli powder – 5 g
  • Turmeric powder – as required
  • Food color (red) – a pinch
  • Ginger – 5 g (chopped)
  • Curry leaves – 2 sprigs
  • Green chillies – 4
  • Curd – 2 tsp
  • Salt – to taste
  • Oil – for frying

Preparation Method

  1. Clean the cauliflower florets and wash them in hot water.
  2. Boil the florets in water for 5 minutes and drain.
  3. Squeeze out excess water and keep aside.
  4. In a bowl, mix barnyard millet flour, corn flour, salt, red chilli powder, turmeric, and food color.
  5. Add the cauliflower florets and coat them evenly with the mixture.
  6. Prepare a thin batter using corn flour and water.
  7. Heat oil in a pan and deep fry the coated cauliflower pieces until crispy and golden. Remove and keep aside.
  8. In another pan, heat 1 tablespoon oil. Add chopped ginger, curry leaves, and green chillies. Sauté briefly.
  9. Add curd and stir well.
  10. Add the fried cauliflower pieces and mix for 1 minute.
  11. Serve hot as a snack or starter.
