Barnyard Millet Milk Cake, also known as Kalakhand, is a rich and soft Indian sweet prepared using barnyard millet and milk. This recipe provides a healthier alternative to traditional kalakhand by incorporating millet, which enhances fiber content and digestibility.

Ingredients

  • Dehulled barnyard millet – 50 g
  • Milk – 500 ml
  • Citric acid – 1 g or lemon – 1
  • Sugar – 75 g
  • Water – as required

Preparation Method

  1. Cook dehulled barnyard millet with about 5 cups of water. Extract approximately 100 ml of millet gruel and strain to remove solids. Keep aside.
  2. In a saucepan, combine the millet gruel and milk. Boil for 10–15 minutes while stirring occasionally.
  3. Add citric acid or lemon juice and continue stirring until the milk curdles.
  4. Add sugar gradually and continue cooking until the mixture thickens and excess moisture evaporates.
  5. Transfer the mixture onto a greased plate or tray and spread evenly.
  6. Allow it to cool completely.
  7. Cut into desired pieces and serve.
