Barnyard Millet Pulao is a wholesome and aromatic dish prepared using barnyard millet and mixed vegetables. This recipe replaces regular rice with millet, making it richer in fiber and easier to digest.

Infused with whole spices, herbs, and vegetables, this pulao is ideal for everyday meals, lunch boxes, and light dinners. It is simple to prepare and offers a balanced combination of taste and nutrition.


Ingredients

  • Barnyard millet rice – 100 g
  • Onion – 1 (sliced)
  • Carrot – 1 (chopped)
  • Beans – 1 (chopped)
  • Potato – 1 (chopped)
  • Green chillies – 3
  • Pepper powder – 1 tsp
  • Cashew nuts – 10 g
  • Cloves – 4
  • Cardamom – 4
  • Cinnamon – 4 small pieces
  • Ginger-garlic paste – 2 tsp
  • Curry leaves – 2 sprigs
  • Oil – as required
  • Salt – to taste
  • Water – as required

Preparation Method

  1. Soak barnyard millet in water for 30 minutes and set aside.
  2. Heat oil in a pressure cooker. Add cloves, cardamom, cinnamon, and curry leaves. Sauté until aromatic.
  3. Add ginger-garlic paste and sauté briefly.
  4. Add sliced onions and cook until translucent.
  5. Add chopped vegetables (carrot, beans, potato) and green chillies. Cook for about 5 minutes.
  6. Add pepper powder and salt. Mix well.
  7. Add soaked millet and sauté for 2–3 minutes.
  8. Add water and mix well.
  9. Close the lid and cook for 5–6 whistles on medium flame.
  10. Once the pressure subsides, open and fluff gently.
  11. Garnish with coriander leaves and cashew nuts.
  12. Serve hot.
