Dates (seedless) – 1 cup
Finger millet (ragi) flakes – ½ cup
Sorghum (jowar) flakes – ½ cup
Almonds – ¼ cup
Cashew nuts – ¼ cup
Pistachios – 2 tablespoons
Poppy seeds – 1 tablespoon
Coconut powder – 2 tablespoons
Cardamom powder – ½ teaspoon
Nutmeg powder – a pinch
Ghee – 2 tablespoons
Dry roast finger millet flakes, sorghum flakes, almonds, cashew nuts, pistachios, and poppy seeds separately on low flame until aromatic.
Grind finger millet flakes, sorghum flakes, almonds, cashew nuts, and pistachios separately into a coarse powder.
Combine all the ground ingredients with coconut powder and cardamom powder.
Deseed the dates (if not already seedless) and keep them ready.
Heat ghee in a pan.
Add nutmeg powder and dates.
Cook on low flame, mashing and stirring continuously.
Add the prepared millet and dry fruit powder mixture to the dates.
Mix thoroughly and cook for about 10–15 minutes until everything combines well into a thick mixture.
Transfer the mixture onto a greased surface or plate.
Shape into a cylindrical roll or flatten evenly like burfi.
Garnish with shredded pistachios and poppy seeds.
Cover with aluminum foil and refrigerate for 30 minutes.
Cut into pieces and serve chilled.
