Muruku, also known as chakli, is a popular Indian snack loved for its crisp texture and savory taste. This Finger Millet Muruku recipe gives the traditional snack a nutritious upgrade by incorporating ragi (finger millet) flour, which is rich in calcium and fiber.

Ingredients

  • Finger millet flour – 1 cup
  • Rice flour – 1 cup
  • Sesame seeds – 2 tsp
  • Turmeric powder – ¼ tsp
  • Chilli powder – 2 tsp
  • Ajwain (carom seeds) – ½ tsp
  • Salt – 1 tsp
  • Water – as required
  • Oil – for deep frying

Preparation Method

  1. In a mixing bowl, add finger millet flour, rice flour, sesame seeds, turmeric powder, chilli powder, ajwain, and salt. Mix well.
  2. Gradually add water and knead into a smooth, soft dough.
  3. Fill the dough into a muruku (chakli) press or hand-operated machine.
  4. On a clean cloth or parchment paper, press and shape the dough into circular spirals (3–4 rounds).
  5. Heat oil in a deep pan on medium flame.
  6. Carefully slide the prepared muruku into hot oil.
  7. Deep fry, flipping occasionally, until the bubbling stops and the muruku turns golden and crisp.
  8. Remove and place on paper towel to absorb excess oil.
  9. Allow to cool completely before serving or storing.
