Finger Millet Potato Patties combine the goodness of finger millet (ragi) with the comfort of potatoes and aromatic spices. Ragi adds calcium and fiber, while potatoes provide structure and taste, resulting in patties that are crisp on the outside and soft inside.
These patties are shallow-fried, making them lighter than deep-fried snacks, and they work well as an evening snack, starter, or lunchbox item. Serve them with tomato sauce or green chutney for a satisfying, millet-based treat.
Finger millet flour – 100 g
Potatoes – 8 (shredded)
Egg – 1
Salt – 3 g
Red chilli powder – 20 g
Pepper powder – 8 g
Turmeric powder – 4 g
Garam masala – 8 g
Curry leaves – 2 g (finely chopped)
Oil – for shallow frying
Shred the potatoes and place them in cold water for 5 minutes.
Remove the potatoes from water and squeeze firmly to remove excess moisture.
In a mixing bowl, add finger millet flour, egg, salt, red chilli powder, pepper powder, turmeric powder, garam masala, and chopped curry leaves.
Add the shredded potatoes to the bowl and mix well to form a thick batter.
Heat a pan on medium flame and lightly grease it with oil.
Take portions of the mixture and place them on the pan, shaping into patties.
Shallow fry on medium flame for 10–15 minutes, flipping occasionally to ensure even cooking on both sides.
Fry until the patties turn golden brown and crisp.
Serve hot with tomato sauce or green chutney
