Finger Millet Vermicelli Kheer Recipe – Healthy Ragi Sweet Dessert

Kheer is a timeless Indian dessert loved for its rich taste and comforting texture. This Finger Millet Vermicelli Kheer offers a healthier variation by using ragi vermicelli instead of refined ingredients, making it rich in calcium and fiber.

Ingredients

  • Finger millet vermicelli – ½ cup (50 g)
  • Ghee – 2 tsp
  • Milk – 500 ml
  • Raisins – 1 tsp
  • Cashew nuts – 1 tsp
  • Cardamom powder – a pinch
  • Sugar – as required

Preparation Method

  1. Heat ghee in a shallow pan and roast the finger millet vermicelli on low flame until it turns light golden brown. Remove and keep aside.
  2. In the same pan, roast cashew nuts and raisins in ghee until golden and aromatic. Keep aside.
  3. In another pan, boil milk on medium flame.
  4. Once the milk starts boiling, add the roasted ragi vermicelli and stir continuously.
  5. Cook for 1–2 minutes until the vermicelli becomes soft. Avoid overcooking.
  6. Add sugar and the roasted cashew nuts and raisins. Cook for another 1 minute.
  7. Add a pinch of cardamom powder and mix well.
  8. Turn off the flame and allow it to rest slightly before serving.

Serving Suggestions

  • Serve hot for a comforting dessert
  • Can also be served chilled
  • Garnish with extra dry fruits for richness
