Foxtail Millet Biryani Recipe – Healthy Vegetable or Chicken Millet Biryani

Foxtail Millet Biryani is a nutritious and aromatic one-pot meal that replaces regular rice with foxtail millet. Rich in fiber and easy to digest, this dish provides a healthier option without compromising on taste.

Prepared with fragrant spices, herbs, and vegetables or chicken, this biryani is suitable for family meals, special occasions, and festive menus. The layered cooking method enhances flavor and gives it a traditional biryani texture and aroma.


Ingredients

  • Foxtail millet rice – 1½ cup
  • Sliced onions – 2 cup
  • Tomatoes – 1 cup
  • Green chillies – 5
  • Chopped carrots – 1 cup
  • French beans – ½ cup
  • Half-boiled green peas – ½ cup
  • Green cardamom pods – 8
  • Black cardamom – 2
  • Cloves – 10
  • Cinnamon – ½ inch stick
  • Bay leaves – 5
  • Caraway seeds (shahi jeera) – ½ tsp
  • Ginger-garlic paste – 1½ tsp
  • Turmeric powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Garam masala powder – 1 tsp
  • Lemon juice – 1 tsp
  • Chopped coriander leaves – 2 tsp
  • Chopped mint leaves – 2 tsp
  • Fried onions – 1 tsp
  • Salt – as required
  • Food colour – a pinch (optional)
  • Ghee – as required
  • Water – as required

For chicken version:

  • Chicken – as required (replace vegetables)

Preparation Method

  1. Soak the foxtail millet in water for 30 minutes.
  2. Boil millet in four cups of salted water with cardamom, cloves, and cinnamon until three-fourth cooked. Drain excess water and set aside.
  3. Heat ghee in a cooker or heavy-bottomed vessel for 3–4 minutes.
  4. Add green cardamom, black cardamom, cloves, cinnamon, bay leaves, and caraway seeds. Roast for 5–7 minutes until aromatic.
  5. Add ginger-garlic paste, onions, tomatoes, carrots, beans, and half-boiled green peas. Add salt, cover, and cook for 2 minutes.
  6. Add turmeric powder, red chilli powder, coriander powder, and garam masala. Mix well and cook for another 2 minutes.
  7. Spread a layer of cooked millet over the vegetable mixture.
  8. Add a layer of cooked vegetables (or chicken for non-veg version).
  9. Sprinkle fried onions, lemon juice, food colour mixed in milk (optional), coriander leaves, and mint leaves.
  10. Cover with a lid and cook on low heat. Let it rest for 30 minutes.
  11. Serve hot.

  • Serve with onion raita
  • Pair with paneer curry or salan
  • Suitable for lunch, dinner, and special occasions

Note

For chicken biryani, replace vegetables with chicken. The remaining procedure remains the same.
