Foxtail Millet Cutlet is a healthy and delicious snack that combines the goodness of foxtail millet with fresh vegetables and spices. This recipe is a great alternative to traditional potato-based cutlets, offering higher fiber, better digestion, and sustained energy.

Crispy on the outside and soft inside, these cutlets are ideal for evening snacks, kids’ tiffin, or even as a starter for gatherings. They can be shallow fried or deep fried depending on preference, making them versatile and easy to prepare.


Ingredients

  • Dehulled foxtail millet – 100 g
  • Potatoes – 20 g (boiled and mashed)
  • Carrots – 20 g (finely chopped)
  • Beans – 20 g (finely chopped)
  • Green chillies – 5 g (chopped)
  • Ginger garlic paste – 1 tsp
  • Chat masala – 5 g
  • Pepper powder – 5 g
  • Salt – 2 g
  • Bread crumbs – 20 g
  • Water – as required
  • Oil – for frying

Preparation Method

  1. Cook foxtail millet with water in a 1:3 ratio for about 25–30 minutes until soft. Keep aside.
  2. Cook or steam chopped vegetables (carrot, beans, potatoes) separately and set aside.
  3. Heat oil in a pan and add ginger garlic paste and green chillies. Sauté until light brown.
  4. Add cooked millet, vegetables, chat masala, pepper, and salt. Mix well until evenly combined.
  5. Allow the mixture to cool slightly.
  6. Shape the mixture into round or oval cutlets.
  7. Coat each cutlet with bread crumbs for extra crispiness.
  8. Heat oil in a pan and shallow fry or deep fry until golden brown on both sides.
  9. Remove and place on tissue paper to absorb excess oil.
