Kachori is a popular Indian snack known for its crispy outer layer and flavorful stuffing. This Foxtail Millet Kachori offers a healthier variation by incorporating foxtail millet flour, making it richer in fiber and nutrients.

The outer dough is prepared using millet flour and refined flour, while the filling consists of a spicy mixture of potatoes, onions, and aromatic Indian spices. Deep-fried to golden perfection, these kachoris are crispy outside and soft inside, making them perfect for tea-time snacks, festive treats, or small gatherings.


Ingredients

For Dough

  • Foxtail millet flour – 40 g
  • Refined wheat flour (maida) – 60 g
  • Ajwain seeds – 2 g
  • Oil – as required
  • Water – as required

For Stuffing

  • Onion – 4 (large, finely chopped)
  • Boiled potatoes – 2 (mashed)
  • Cumin seeds – 1 tsp
  • Fennel seeds – 1 tsp
  • Coriander powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Garam masala – ½ tsp
  • Roasted Bengal gram flour – 2 tsp
  • Green chillies – 4 (chopped)
  • Salt – to taste
  • Oil – as required

Preparation Method

Step 1: Prepare the Filling

  1. Heat oil in a pan and add cumin seeds and fennel seeds. Fry for 2 minutes.
  2. Add chopped onions and green chillies. Sauté until soft.
  3. Add turmeric powder, red chilli powder, coriander powder, garam masala, and salt.
  4. Add roasted Bengal gram flour and mashed potatoes.
  5. Mix well and cook for 5–6 minutes.
  6. Allow the mixture to cool and shape into small lemon-sized balls.

Step 2: Prepare the Dough

  1. In a mixing bowl, add foxtail millet flour, maida, ajwain seeds, and oil.
  2. Gradually add water and knead into a firm yet pliable dough.
  3. Cover and let the dough rest for a few minutes.

Step 3: Shape and Fry Kachori

  1. Divide the dough into small balls and roll into small circles.
  2. Place the prepared filling in the center.
  3. Seal the edges and shape into a ball.
  4. Flatten gently and roll slightly to medium thickness.
  5. Heat oil on low to medium flame.
  6. Fry the kachoris slowly, pressing gently so they puff up.
  7. Fry for 7–9 minutes until golden brown and crisp on all sides.
  8. Remove and place on absorbent paper to remove excess oil.

  • Serve hot with tomato sauce or green chutney
