Foxtail Millet Kheer is a rich and wholesome dessert prepared using foxtail millet, milk, and aromatic spices. This recipe offers a healthier substitute for traditional rice kheer due to its higher fiber content and better digestibility.

The creamy texture combined with the richness of milk and the crunch of dry fruits makes it suitable for festivals, special occasions, or as an everyday dessert.


Ingredients

  • Dehulled foxtail millet – 50 g
  • Dry fruits (cashew nuts, almonds, raisins, pista) – 20 g
  • Ghee – 25 g
  • Sugar – 50 g
  • Milk – 400 ml
  • Cardamom powder – a pinch
  • Water – as required

Preparation Method

  1. Soak the foxtail millet in water for 1 hour.
  2. Take a thick-bottomed vessel and add soaked millet with water in a 1:3 ratio.
  3. Cook for 20–25 minutes until soft.
  4. Roast dry fruits in ghee and keep aside.
  5. Boil milk in a separate vessel.
  6. Add the cooked millet to the milk and cook for 20 minutes on low flame.
  7. Add sugar and stir continuously for 10 minutes until the kheer thickens.
  8. Add cardamom powder and mix well.
  9. Garnish with roasted dry fruits.
  10. Serve hot as a traditional dessert.
