Foxtail Millet Mango Rice is a refreshing and tangy dish prepared using foxtail millet and grated raw mango. This recipe is a nutritious alternative to traditional rice-based mango rice, offering higher fiber and better digestion.

Ingredients

  • Foxtail millet rice – 1 cup
  • Water – 4 cups
  • Grated raw mango – 1 cup
  • Groundnuts – 2 tsp
  • Curry leaves – 3 sprigs
  • Green chillies – 4 (slit)
  • Red chillies – 2
  • Mustard seeds – 1 tsp
  • Black gram dal – 1 tsp
  • Turmeric powder – 1 tsp
  • Asafoetida – a pinch
  • Oil – as required
  • Salt – to taste

Preparation Method

  1. Soak the foxtail millet in water for 1 hour.
  2. Cook the millet with water in a 1:4 ratio for 20–25 minutes until soft.
  3. Allow the cooked millet to cool slightly.
  4. Heat oil in a saucepan for a few minutes.
  5. Add mustard seeds and let them splutter.
  6. Add black gram dal, groundnuts, green chillies, red chillies, and curry leaves. Roast for 5–7 minutes.
  7. Add turmeric and asafoetida, and mix well.
  8. Add grated raw mango and salt. Sauté for 2 minutes.
  9. Add the cooked millet and mix thoroughly for 2 minutes.
  10. Serve hot as a tangy and flavorful dish.
