Foxtail Millet Muruku is a crunchy and flavorful variation of the classic Indian chakli, prepared using foxtail millet flour instead of refined ingredients. Rich in fiber and essential nutrients, foxtail millet makes this snack both tasty and wholesome.

Blended with lentil flours like moong dal and urad dal, along with spices and sesame seeds, this muruku delivers a perfect balance of crispiness and flavor. It is ideal for festive preparations, bulk storage, or as an everyday healthy snack option.


Ingredients

  • Foxtail millet flour – 100 g
  • Moong dal – 30 g
  • Urad dal – 20 g
  • Red chilli powder – 2 g
  • Ajwain (carom seeds) – 1 g
  • Turmeric powder – 2 g
  • Papadkhar – 5 g
  • Sesame seeds – 3 g
  • Salt – 1 g
  • Hot water – as required
  • Oil – for deep frying

Preparation Method

  1. In a mixing bowl, combine foxtail millet flour, moong dal flour (or finely ground moong dal), urad dal flour, red chilli powder, ajwain, turmeric powder, papadkhar, sesame seeds, and salt. Mix well.
  2. Gradually add hot water and knead into a smooth, soft dough.
  3. Heat oil in a wide, heavy-bottomed vessel for deep frying.
  4. Fill the dough into a muruku/chakli maker.
  5. Once the oil is hot, press the muruku maker directly over the oil to form spiral shapes.
  6. Fry on medium flame, turning gently with a slotted spoon for even cooking.
  7. Continue frying until the oil stops sizzling and muruku turns golden and crisp.
  8. Remove and place on tissue paper to absorb excess oil.
  9. Allow to cool completely before serving or storing.
