Rasagulla is one of India’s most loved traditional sweets, known for its soft, spongy texture and syrupy sweetness. This Foxtail Millet Rasagulla introduces a nutritious variation by incorporating foxtail millet milk into the preparation.

The addition of millet enhances the nutritional value while maintaining the authentic texture and taste. Soft paneer balls are cooked in light sugar syrup, resulting in a delicate, juicy dessert that is perfect for festive occasions, celebrations, or special treats.


Ingredients

  • Foxtail millet rice – 100 g
  • Regular milk – 100 ml
  • Sugar – 10 g
  • Lemon – 1 (juice extracted)
  • Water – as required

Preparation Method

  1. Boil foxtail millet grains in excess water. Strain and extract about 100 ml of millet gruel (millet milk).
  2. In a pan, combine foxtail millet milk with regular milk and bring it to a boil.
  3. Add lemon juice gradually to curdle the milk.
  4. Once the milk coagulates, remove from heat.
  5. Strain the curdled mixture using a muslin cloth and squeeze out excess water. Tie and hang for 1 hour.
  6. Take the prepared paneer and knead it into a smooth, soft dough.
  7. Divide and roll into small smooth balls. Cover with a muslin cloth to prevent drying.
  8. In a separate pan, prepare sugar syrup by boiling sugar and water in 1:1 ratio until it reaches one-string consistency.
  9. Add the paneer balls to the sugar syrup and cook until they expand and absorb the syrup.
  10. Turn off the heat and allow the rasagullas to cool in the syrup before serving.
