Kaddu Ki Kheer, also known as Lauki Kheer, is a traditional Indian dessert made using bottle gourd and milk. This millet-based version enhances the nutritional value by adding dehulled proso millet and sago, making it more wholesome and filling.

Ingredients

  • Dehulled proso millet – 25 g
  • Sago (sabudana) – 25 g
  • Cashew nuts – 50 g
  • Sugar – 20 g
  • Condensed milk – 100 g
  • Bottle gourd (kaddu/lauki) – 50 g (grated)
  • Milk – 500 ml
  • Cardamom powder – 2 g
  • Almonds and pistachios – for garnishing

Preparation Method

Step 1: Soaking

  1. Soak sago and dehulled proso millet separately in water for 30 minutes.
  2. Drain the water and keep aside.

Step 2: Prepare Bottle Gourd

  1. Grate the bottle gourd finely.
  2. Boil it in water for 10 minutes and drain excess water.

Step 3: Prepare Cashew Paste

  1. Grind cashew nuts with a little water to make a smooth paste.

Step 4: Cooking Base

  1. In a vessel, add soaked sago and proso millet with water.
  2. Cook until they become soft and fluffy.

Step 5: Prepare Kheer

  1. Add milk to the cooked mixture and bring it to a boil.
  2. Add cashew paste, condensed milk, and sugar.
  3. Mix well and cook for a few minutes.
  4. Add the boiled grated bottle gourd.
  5. Cook for another 10 minutes on low flame.

Step 6: Final Touch

  1. Add cardamom powder and mix well.
  2. Turn off the flame.
  3. Garnish with almonds and pistachios.
