Kodo Millet Coconut Rice is a simple and nutritious dish that combines cooked millet with fresh coconut and traditional tempering. This recipe is a healthier substitute for regular rice-based coconut rice, offering improved fiber content and easy digestion.

Ingredients

  • Dehulled kodo millet rice – 50 g
  • Coconut paste – 30 g
  • Bengal gram dal (chana dal) – 10 g
  • Mustard seeds – 5 g
  • Green chillies – 3
  • Curry leaves – 1 small bunch
  • Oil – as required
  • Salt – to taste
  • Water – as required

Preparation Method

  1. Cook kodo millet with water in a 1:2 ratio for about 20 minutes on medium flame. Keep aside.
  2. Prepare fresh coconut paste and set aside.
  3. Heat oil in a pan. Add mustard seeds and chana dal. Sauté until they begin to crackle and turn light golden.
  4. Add coconut paste to the pan and mix well.
  5. Add curry leaves and green chillies. Sauté all ingredients together for a few minutes.
  6. Add salt and mix thoroughly.
  7. Add the cooked kodo millet to the pan and mix well with the coconut mixture.
  8. Cook for 5 minutes on low flame to allow flavors to blend.
  9. Serve hot.
