Kodo Millet Coriander Rice is a light and aromatic dish prepared using kodo millet and freshly ground coriander chutney. This recipe is a healthier substitute for regular rice-based coriander rice, offering better fiber content and improved digestion.

The combination of fresh herbs, mild spices, and vegetables gives this dish a refreshing taste, making it suitable for lunch, dinner, or meal prep.


Ingredients

For Rice:

  • Kodo millet – 1 cup
  • Water – 5 cups
  • Bay leaves – 2
  • Salt – to taste

For Cooking:

  • Onion – 1 (chopped)
  • Carrot – 1 cup (chopped)
  • Tomato – 2 (chopped)
  • Curry leaves – 1 sprig
  • Oil – 1 tsp

For Coriander Chutney:

  • Coriander leaves – 1 cup
  • Mint leaves – ½ cup
  • Green chilli – 1
  • Cloves – 1
  • Garlic – 1 clove
  • Ginger – small piece
  • Oil – 2 tsp
  • Salt – to taste

Preparation Method

  1. Cook kodo millet in a pressure cooker with water, salt, and bay leaves for 1 whistle on medium flame. Allow it to cool completely to avoid mushiness.
  2. Prepare coriander chutney by grinding coriander leaves, mint leaves, green chilli, cloves, garlic, ginger, oil, and salt with minimal water. Set aside.
  3. Heat oil in a pan and add whole spices if desired. Sauté for a minute.
  4. Add chopped onions and sauté until translucent.
  5. Add chopped carrots and cook for a few minutes.
  6. Add the prepared coriander chutney and cook until the raw flavor disappears. Add salt as needed.
  7. Add the cooked and cooled kodo millet to the pan. Mix gently until well combined.
  8. Remove from flame and serve hot.
