Kodo Millet Dhokla is a light, steamed, and nutritious snack prepared using kodo millet flour and gram flour (besan). This recipe offers a healthier version of traditional dhokla with added fiber and improved digestibility.

Soft in texture and mildly tangy in taste, this dish is perfect for breakfast, evening snacks, or light meals. The tempering enhances flavor and gives it an authentic taste.


Ingredients

  • Kodo millet flour – 40 g
  • Besan – 60 g
  • Turmeric powder – 2 g
  • Salt – 6 g
  • Baking soda – 3 g
  • Citric acid – a pinch
  • Oil – 40 g
  • Water – 130 ml (for batter) + 100 ml (for seasoning)
  • Mustard seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Red chillies – 2
  • Curry leaves – 6

Preparation Method

  1. In a bowl, combine kodo millet flour, besan, citric acid, turmeric powder, salt, and water. Mix well to form a smooth batter of medium-thick consistency.
  2. Add oil and baking soda to the batter and mix thoroughly.
  3. Grease a steaming tray or tin with oil and pour the batter evenly.
  4. Steam for 20 minutes until cooked. Allow it to cool.
  5. Cut into desired pieces and keep aside.
  6. Heat oil in a pan. Add mustard seeds, cumin seeds, red chillies, and curry leaves. Fry for about 3 minutes.
  7. Add water to the tempering and boil for 5 minutes.
  8. Pour the seasoned water evenly over the dhokla pieces.
  9. Serve as a healthy and light millet snack.
