Kodo Millet Methi Rice Recipe – Healthy Millet Fenugreek Rice

Kodo Millet Methi Rice is a wholesome and aromatic dish prepared using kodo millet and fresh methi (fenugreek) leaves. This recipe combines the health benefits of millet with the nutritional richness of leafy greens, making it ideal for balanced meals.

Ingredients

  • Kodo millet – 1 cup
  • Water – 3 cups (adjust as needed)
  • Chopped methi leaves – 2 cups
  • Chopped onions – ½ cup
  • Chopped tomatoes – ½ cup
  • Ginger-garlic paste – 2 tsp
  • Green chillies – 3
  • Curry leaves – 1 sprig
  • Bay leaf – 1
  • Cloves – 2
  • Oil – 1 tsp
  • Salt – to taste

Preparation Method

  1. Wash kodo millet thoroughly and keep aside.
  2. Wash and chop all vegetables, including methi leaves, and keep ready.
  3. Heat oil in a pressure cooker. Add bay leaf and cloves, and fry for a few minutes.
  4. Add curry leaves and chopped onions. Sauté until the onions turn translucent.
  5. Add green chillies and ginger-garlic paste. Fry for 3 to 4 minutes.
  6. Add water and bring it to a boil.
  7. Add the washed kodo millet and chopped methi leaves.
  8. Add salt and mix well.
  9. Close the lid and cook on medium flame for about 4 whistles.
  10. Once the pressure subsides, open the lid and mix gently.
  11. Serve hot.
