Kodo Millet Phirni is a rich and smooth dessert prepared using ground kodo millet, milk, and sugar. This recipe is a healthier alternative to traditional rice-based phirni, offering better fiber content and easier digestion.

Ingredients

  • Kodo millet (dehulled grains) – 50 g
  • Milk – 500 ml
  • Sugar – 80 g
  • Cardamom powder – 1 g
  • Pista – 5 g (crushed)

Preparation Method

  1. Soak kodo millet grains in water for 4 hours and wash thoroughly.
  2. Grind the soaked millet into a fine paste by adding a small amount of water. Keep aside.
  3. Heat milk in a pan until it comes to a boil, then simmer on low flame.
  4. Add the millet paste to the hot milk while stirring continuously to avoid lumps.
  5. Cook the mixture until it thickens to a creamy consistency.
  6. Add sugar and mix well until dissolved.
  7. Add cardamom powder and stir.
  8. Garnish with crushed pista.
  9. Refrigerate for about 1 hour.
  10. Serve chilled.
