Kodo Millet Pulao is a wholesome and aromatic dish prepared using kodo millet and mixed vegetables. This recipe replaces regular rice with millet, making it higher in fiber and easier to digest.

Infused with whole spices, mint leaves, and vegetables, this pulao is perfect for everyday meals, lunch boxes, or light dinners. It is simple to prepare and offers a balanced combination of taste and nutrition.


Ingredients

  • Kodo millet – 1 cup
  • Water – 5 cups
  • Chopped carrot, beans, and green peas – 1 cup
  • Onion – 1 (sliced)
  • Ginger-garlic paste – 1 tsp
  • Green chillies – 2
  • Mint leaves – 10–12
  • Cinnamon – 1 inch piece
  • Fennel seeds – 1 tsp
  • Bay leaves – 2
  • Ghee – 3 tsp
  • Oil – 1 tsp
  • Salt – to taste

Preparation Method

  1. Wash kodo millet thoroughly and keep aside.
  2. Heat oil and ghee in a pressure cooker. Add cinnamon, fennel seeds, and bay leaves. Sauté for a few seconds until aromatic.
  3. Add sliced onions and ginger-garlic paste. Sauté until the onions turn translucent.
  4. Add chopped vegetables and mint leaves. Add salt and sauté for about 5 minutes.
  5. Add the washed kodo millet and mix well. Cook for 1 minute.
  6. Add water and salt as required. Bring to a boil and mix well.
  7. Close the lid and cook on medium flame for about 4 whistles.
  8. Once the pressure subsides, open the lid and fluff gently.
  9. Garnish with chopped coriander leaves and serve hot.
