Kodo Millet Uggani is a simple and nutritious dish prepared using kodo millet puffs combined with spices, peanuts, and vegetables. This recipe is a healthier substitute for traditional puffed rice uggani, offering better fiber content and sustained energy.

Ingredients

  • Kodo millet puffs – 100 g
  • Onion – 1 (chopped)
  • Green chillies – 2 (chopped)
  • Curry leaves – 6
  • Tomato – 1 (chopped)
  • Turmeric powder – 2 tsp
  • Roasted Bengal gram dal powder – 20 g
  • Peanuts – 10 g
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Asafoetida (hing) – 1 g
  • Salt – to taste
  • Oil – as required

Preparation Method

  1. Soak kodo millet puffs in water for 5 minutes and drain excess water after 2 minutes.
  2. Heat oil in a pan. Add cumin seeds, mustard seeds, hing, and peanuts. Fry for about 2 minutes.
  3. Add chopped green chillies, onions, curry leaves, and turmeric powder. Sauté until the onions turn soft.
  4. Add chopped tomatoes and salt. Cook until the tomatoes soften.
  5. Add the soaked millet puffs and mix well.
  6. Turn off the flame and garnish with roasted Bengal gram dal powder and grated carrots if desired.
  7. Serve hot.
