  • Green chilies – 3–4 (finely chopped)
  • Curry leaves – 6–8 (chopped)
  • Coriander leaves – 2 tablespoons (chopped)
  • Salt – to taste
  • Oil – 2 teaspoons (for mixing) + for deep frying
  • Water – as required

Preparation Method

Step 1: Prepare Dough

  1. In a mixing bowl, combine proso millet flour, rice flour, besan, and maida.
  2. Add chopped onion, soaked chana dal, green chilies, curry leaves, coriander leaves, and salt.
  3. Heat 2 teaspoons of oil and pour it over the mixture.
  4. Mix everything well.
  5. Add water gradually and knead into a soft dough.

Step 2: Shaping

  1. Grease your hands with oil.
  2. Take small portions of dough and shape into balls.
  3. Flatten each ball gently on your palm.

Step 3: Frying

  1. Heat oil in a deep pan on medium flame.
  2. Drop the flattened dough pieces into hot oil.
  3. Fry on medium flame, stirring occasionally.
  4. Cook until they turn golden brown and crispy.
  5. Remove and drain excess oil on paper towels.
