  • Cardamom pods – 2–3
  • Ginger-garlic paste – 1 teaspoon
  • Grated mozzarella cheese – 200 g
  • Coriander leaves – for garnish
  • Oil – 2 tablespoons
  • Salt – to taste

Preparation Method

Step 1: Cook Millet

  1. Wash dehulled little millet thoroughly.
  2. Cook with water in a 1:2 ratio for about 15 minutes until soft and fluffy.
  3. Keep aside.

Step 2: Prepare Base

  1. Heat oil in a pan.
  2. Add caraway seeds, bay leaves, cinnamon, and cardamom pods.
  3. Sauté until aromatic.

Step 3: Cook Vegetables

  1. Add sliced onions and sauté until translucent.
  2. Add carrot, beans, peas, potatoes, and ginger-garlic paste.
  3. Cook for a few minutes until vegetables are slightly tender.

Step 4: Combine

  1. Add cooked millet to the pan.
  2. Mix well with vegetables and spices.
  3. Add salt as required.

Step 5: Add Cheese & Bake

  1. Add grated mozzarella cheese and mix lightly.
  2. Transfer to an oven-safe dish.
  3. Preheat oven and bake at 100°C for 15 minutes.
