Ingredients

Preparation Method

  1. Sieve all the millet flours separately to ensure a fine texture.

  2. In a mixing bowl, combine the flours with red chili powder, turmeric powder, baking soda, salt, and required oil.

  3. Add water gradually and knead into a very stiff dough.

  4. Cover the dough with a muslin cloth and let it rest for 10 minutes.

  5. Take a small lemon-sized portion of dough and shape it into a ball.

  6. Grease it lightly with oil, place it on a rolling board, and flatten slightly.

  7. Roll it into a very thin circle (thinner than a phulka/roti). Do not use dry flour for dusting—use oil instead.

  8. The rolled sheet should appear thin and slightly transparent.

  9. Using a knife, cut the rolled circle into 2-inch wide strips.

  10. Heat oil in a deep pan over medium flame.

  11. When the oil is medium hot, add 2–3 strips at a time.

  12. Fry until they puff up and turn light brown and crispy (this happens quickly).

  13. Remove using a slotted spoon and drain excess oil.

  14. Sprinkle red chili powder over the fried chorafali.

  15. Allow to cool slightly and serve crispy.
