Known for its crispy texture and unique puffed layers, chorafali is deep-fried and seasoned with red chili powder for a spicy kick. Despite being fried, its light and airy texture makes it a favorite festive snack.
Mixed millet flours – 1 cup
Red chili powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Baking soda – a pinch
Salt – to taste
Oil – 1 tablespoon (for dough) + for deep frying
Water – as required
Sieve all the millet flours separately to ensure a fine texture.
In a mixing bowl, combine the flours with red chili powder, turmeric powder, baking soda, salt, and required oil.
Add water gradually and knead into a very stiff dough.
Cover the dough with a muslin cloth and let it rest for 10 minutes.
Take a small lemon-sized portion of dough and shape it into a ball.
Grease it lightly with oil, place it on a rolling board, and flatten slightly.
Roll it into a very thin circle (thinner than a phulka/roti). Do not use dry flour for dusting—use oil instead.
The rolled sheet should appear thin and slightly transparent.
Using a knife, cut the rolled circle into 2-inch wide strips.
Heat oil in a deep pan over medium flame.
When the oil is medium hot, add 2–3 strips at a time.
Fry until they puff up and turn light brown and crispy (this happens quickly).
Remove using a slotted spoon and drain excess oil.
Sprinkle red chili powder over the fried chorafali.
Allow to cool slightly and serve crispy.
