Ingredients

For Manchurian Balls:

  • Proso millet flour – 100 g
  • Maida – 100 g
  • Corn flour – 100 g
  • Cabbage – 250 g (grated)
  • Carrot – 1 (grated)
  • French beans – 6 (finely chopped)
  • Salt – to taste
  • Ginger-garlic paste – 1 tablespoon
  • Red chili powder – 1 teaspoon
  • Soya sauce – 1 teaspoon
  • Vinegar – 1 teaspoon
  • Food color – a pinch (optional)

For Sauce:

  • Onion – 1 (chopped)
  • Capsicum – 1 (chopped)
  • Green chilies – 4–5 (chopped)
  • Garlic – 1 tablespoon (chopped)
  • Soya sauce – 1 teaspoon
  • Tomato sauce – 1 teaspoon
  • Chili sauce – 1 teaspoon
  • Vinegar – 1 teaspoon
  • Corn flour – 1 teaspoon
  • Water – ½ cup
  • Oil – 2 tablespoons

Preparation Method

Step 1: Prepare Vegetables

  1. Grate cabbage, carrot, and chop beans.
  2. Add a little salt and boil the vegetables in water for 15–20 minutes.
  3. Drain and squeeze out excess water completely.

Step 2: Prepare Manchurian Balls

  1. Transfer vegetables to a bowl.
  2. Add ginger-garlic paste, salt, red chili powder, soya sauce, vinegar, maida, corn flour, and proso millet flour.
  3. Mix well to form a thick mixture.
  4. Shape into small balls.
  5. Heat oil and deep fry on low to medium flame until golden and crispy.
  6. Remove and keep aside.

Step 3: Prepare Sauce

  1. Heat oil in a pan.
  2. Add chopped garlic, green chilies, onion, carrot, cabbage, and capsicum.
  3. Sauté for a few minutes.
  4. Add soya sauce, tomato sauce, chili sauce, and vinegar.
  5. Mix corn flour with water and add to the pan.
  6. Cook until the sauce thickens.

Step 4: Combine

  1. Add fried Manchurian balls to the sauce.
  2. Mix gently until well coated.

Step 5: Serve

  1. Garnish with fresh coriander.
  2. Serve hot.
