  • Curry leaves – few
  • Oil – 2–3 teaspoons
  • Salt – to taste

Preparation Method

Step 1: Prepare Dough

  1. In a large bowl, mix proso millet flour and maida.
  2. Add salt and a little oil.
  3. Add hot water gradually and knead into a firm dough.
  4. Cover and let it rest for 15–20 minutes.

Step 2: Prepare Filling

  1. Heat oil in a pan.
  2. Add mustard seeds and cumin seeds; allow them to splutter.
  3. Add chopped onions, green chilies, and curry leaves.
  4. Sauté for a few minutes.
  5. Add turmeric powder, boiled potatoes, and peas.
  6. Add salt and mix well.
  7. Cook for about 10 minutes and let the mixture cool.

Step 3: Shaping

  1. Divide the dough into small balls.
  2. Roll each ball into a thin chapati.
  3. Cut each chapati into halves.
  4. Take one half, form a cone, and fill with prepared stuffing.
  5. Seal the edges properly to form a triangular shape.

Step 4: Frying

  1. Heat oil in a deep pan on medium flame.
  2. Deep fry the samosas until golden brown and crispy.
  3. Remove and drain excess oil.

Step 5: Serve

  1. Serve hot with tomato sauce or green chutney.
