Pearl millet flour blends well with butter and cheese, giving cookies a crisp texture and deep flavor.
Pearl millet flour – 50 g
Refined wheat flour / Maida – 50 g
Salted butter – 60 g (softened)
Mozzarella cheese – 40 g (grated)
Salt – 2 g
Red chilli powder – 2 g
Baking powder – 3 g
Prepare the Base Mixture
In a blender or mixer, add butter and mozzarella cheese. Blend until smooth and creamy.
Add Seasonings
Slowly add salt, red chilli powder, and baking powder. Mix well.
Add Flours & Make Dough
Add pearl millet flour and maida. Blend until the mixture comes together into a smooth dough.
Chill the Dough
Wrap the dough and refrigerate for at least 15 minutes. This helps in better shaping and texture.
Shape the Cookies
Place the chilled dough on a lined baking sheet. Roll lightly and cut into desired shapes using cookie cutters.
Preheat the Oven
Preheat the oven at 180°C for 15 minutes.
Bake the Cookies
Bake the cookies at 180°C for 15 minutes or until lightly golden.
Cool & Serve
Remove from oven and allow to cool completely at room temperature before serving.
Serve with hot tea or coffee
