Halwa is one of the most loved traditional Indian desserts, known for its rich aroma and smooth texture. This Pearl Millet Halwa recipe gives the classic sweet a wholesome millet upgrade by using pearl millet (bajra) flour instead of refined ingredients and jaggery as a natural sweetener.

Slow roasting the millet flour in ghee enhances its nutty flavor, while milk and jaggery give the halwa its soft, melt-in-the-mouth texture. This dessert is not only delicious but also filling and nourishing, making it perfect for festivals, poojas, and family gatherings.

Ingredients

  • Pearl millet flour – 1 cup

  • Jaggery (grated) – 1 cup

  • Ghee – 1 cup

  • Milk – 1 cup

Preparation Method

  1. Heat ghee in a pan and add pearl millet flour. Roast on low flame until the aroma develops and the color changes slightly.

  2. Slowly add milk to the roasted flour, stirring continuously to avoid lumps. Cook for 5–10 minutes on low flame.

  3. In a separate saucepan, add grated jaggery and 1 tablespoon of water. Melt on low flame until fully dissolved. Strain if required.

  4. Add the melted jaggery and a pinch of ghee to the millet mixture. Mix well until it thickens and leaves the sides of the pan.

  5. Pour the prepared halwa into a greased mould or tray and allow it to set.

  6. Garnish with grated dry fruits if desired and serve warm or at room temperature.
