Ingredients Required

For Jalebi Batter

  • Pearl millet flour – 50 g

  • Refined wheat flour (maida) – 50 g

  • Baking powder – 3 g

  • Curd – 25 g

  • Orange food colour – a pinch (mixed with little water)

  • Water – as required

For Sugar Syrup

  • Sugar – 150 g

  • Water – 150 ml (1:1 ratio)

Preparation Method: Pearl Millet Jalebi

A. Prepare Sugar Syrup

  • In a vessel, add sugar and water in a 1:1 ratio.
  • Boil on medium flame until it reaches thin string consistency.
  • Switch off the flame, allow it to cool slightly, and keep aside.

B. Prepare Jalebi Batter

  • In a large bowl, add maida, pearl millet flour, baking powder, and food colour. Mix well.
  • Add curd and mix to form a thick, lump-free batter.
  • The batter should be thick yet flowing in consistency.

C. Fry the Jalebi

  • Heat oil in a pan on medium flame.
  • Transfer the batter into a piping bag or cone-shaped cloth with a small hole.
  • Gently squeeze the batter into hot oil in circular spiral motions, starting from the center.
  • Fry until the jalebis turn crispy and golden.

D. Soak & Serve

  • Remove the jalebis and immediately add them to the warm sugar syrup.
  • Let them soak for 2 minutes.
  • Transfer to a serving plate and serve warm.
