Muthias are a popular traditional snack known for their soft texture and mild seasoning. This Pearl Millet Onion Muthias recipe gives the classic dish a nutritious upgrade by using pearl millet (bajra) flour as the base.
Combined with finely chopped onions, spices, and fresh coriander, these muthias are shaped, lightly fried, and then gently cooked to absorb flavors. They are easy to digest, filling, and suitable for breakfast, tea-time, or a light dinner.
Ingredients
Pearl millet flour – 1 cup
Finely chopped onions – ½ cup
Turmeric powder – ½ tsp
Chilli powder – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Ginger–green chilli paste – ½ tsp
Baking soda – ¼ tsp
Finely chopped coriander leaves – 2 tsp
Salt – to taste
Oil – as required
Water – as required
In a mixing bowl, combine pearl millet flour, chopped onions, turmeric, chilli powder, coriander powder, cumin powder, ginger–green chilli paste, baking soda, coriander leaves, and salt.
Add 1 tbsp oil and mix well. Gradually add water and knead into a semi-soft dough.
Apply a little oil to your hands, shape the dough into cylindrical rolls, and cut into even slices.
Heat the remaining oil in a non-stick pan and add mustard seeds.
Shallow fry the muthia slices lightly and season with cumin seeds.
Add the muthias along with 4 cups of water and cook on medium flame for 5–8 minutes.
If required, add a little more water and cook for another 5 minutes until soft.
Garnish with fresh coriander leaves and serve hot.
Serve with green chutney or curd
