Pesarattu is a traditional Andhra-style dosa known for its high protein content and crisp texture. This Pearl Millet Pesarattu recipe enhances the classic preparation by combining pearl millet (bajra) with whole green gram, creating a balanced, nourishing meal.
Light fermentation improves digestibility, while ginger, chillies, onions, and coriander add depth of flavor. Crisp on the outside and soft inside, this pesarattu is ideal for breakfast, brunch, or a light dinner.
Pearl millet – 1 cup
Whole green gram (moong) – 1 cup
Red chillies – 4
Green chillies – 2
Ginger – ½ inch
Onion – 2–3 (finely chopped)
Coriander leaves – 2 tsp (chopped)
Salt – to taste
Water – as required
Soak & Grind
Soak pearl millet and whole green gram together for 5–6 hours. Drain and grind with water to a smooth batter.
Ferment
Allow the batter to ferment for 3–4 hours in a warm place.
Season the Batter
Grind red chillies, green chillies, ginger, and salt. Add this paste to the fermented batter. Mix in chopped onions and coriander leaves.
Cook the Pesarattu
Heat a tawa on medium flame. Pour a ladleful of batter and spread into a round dosa. Drizzle oil if required.
Flip & Roast
Cook until the base turns crisp, flip, and cook the other side until done.
Serve Hot
Remove from the tawa and serve immediately.
Serve hot with peanut–coconut chutney
