Ingredients 

For Puff Dough

  • Pearl millet flour – 50 g

  • Finger millet semolina (ragi rawa) – 20 g

  • Wheat flour – 30 g

  • Refined wheat flour (maida) – 20 g

  • Salt – as required

  • Oil – as required

  • Water – as required

For Vegetable Filling

  • Onions – 2 (finely chopped)

  • Cumin seeds – 1 tsp

  • Boiled carrot (grated) – 1

  • Boiled potato (grated) – 1

  • Chaat masala – ½ tsp

  • Coriander powder – ½ tsp

  • Garam masala powder – ¼ tsp

  • Coriander leaves – ½ bunch (chopped)

  • Oil – 1 tbsp

Preparation Method

Dough Preparation

  1. In a mixing bowl, add pearl millet flour, finger millet semolina, wheat flour, salt, and oil. Crumble well.

  2. Gradually add water and knead into a smooth, soft dough.

  3. Cover with a moist cloth and rest for 15 minutes.

  4. In a separate bowl, prepare a slurry using maida, salt, and water. Keep aside.

Vegetable Filling

  1. Heat oil in a pan. Add cumin seeds and chopped onions. Sauté until translucent.

  2. Add grated carrot, potato, chaat masala, coriander powder, coriander leaves, and salt.

  3. Add garam masala, mix well, cook for 2–3 minutes, and keep aside to cool.

Shaping and Frying

  1. Lightly dust the dough and roll into a thick sheet.

  2. Cut into rectangular pieces.

  3. Place a spoonful of vegetable filling in the center.

  4. Fold, seal the edges, and coat with maida slurry.

  5. Deep fry in medium-hot oil until golden brown.

  6. Drain excess oil on absorbent paper.
