Veggie puffs are one of the most popular bakery snacks, loved for their crisp outer layer and flavorful vegetable stuffing. This Pearl Millet Veggie Box Puff recipe recreates the same experience using a millet-rich dough, making it more nutritious while retaining the classic taste and texture.
Prepared with a blend of pearl millet flour, finger millet semolina, and wheat flour, these box-shaped puffs are filled with a mildly spiced vegetable curry and deep-fried until golden brown. They are ideal for tea-time, evening snacks, parties, and kids’ snack boxes.
Pearl millet flour – 50 g
Finger millet semolina (ragi rawa) – 20 g
Wheat flour – 30 g
Refined wheat flour (maida) – 20 g
Salt – as required
Oil – as required
Water – as required
Onions – 2 (finely chopped)
Cumin seeds – 1 tsp
Boiled carrot (grated) – 1
Boiled potato (grated) – 1
Chaat masala – ½ tsp
Coriander powder – ½ tsp
Garam masala powder – ¼ tsp
Coriander leaves – ½ bunch (chopped)
Oil – 1 tbsp
In a mixing bowl, add pearl millet flour, finger millet semolina, wheat flour, salt, and oil. Crumble well.
Gradually add water and knead into a smooth, soft dough.
Cover with a moist cloth and rest for 15 minutes.
In a separate bowl, prepare a slurry using maida, salt, and water. Keep aside.
Heat oil in a pan. Add cumin seeds and chopped onions. Sauté until translucent.
Add grated carrot, potato, chaat masala, coriander powder, coriander leaves, and salt.
Add garam masala, mix well, cook for 2–3 minutes, and keep aside to cool.
Lightly dust the dough and roll into a thick sheet.
Cut into rectangular pieces.
Place a spoonful of vegetable filling in the center.
Fold, seal the edges, and coat with maida slurry.
Deep fry in medium-hot oil until golden brown.
Drain excess oil on absorbent paper.
Serve hot with tomato sauce or green chutney
