Dilkush is a popular bakery-style sweet snack known for its soft texture, rich filling, and mildly sweet taste. Traditionally made with refined flour, this version gives Dilkush a nutritious upgrade by incorporating sorghum (jowar) flour, making it more wholesome without losing its classic appeal.

Ingredients Required

For Dough

  • Sorghum flour – 40 g

  • Maida (all-purpose flour) – 60 g

  • Dry yeast – 5 g

  • Sugar – 20 g

  • Butter – 30 g (melted)

  • Tutti frutti (red & green) – 50 g

  • Chopped cherries – 20 g

  • Coconut powder – 30 g

  • Sugar – 20 g

  • Raisins – 10 g

  • Cashews – 10 (chopped)

  • Cardamom pods – 10 (powdered)

  • Melted butter – 15 g

Preparation Method: Sorghum Dilkush

Activate the Yeast

In a bowl, add a small amount of lukewarm milk, dry yeast, and sugar. Mix gently and rest for 10 minutes until frothy.

Prepare the Dough

Add sorghum flour, maida, melted butter, and remaining milk to the activated yeast. Knead well to form a soft, smooth dough. Cover and proof at room temperature for 15 minutes.

Prepare the Stuffing

In a separate bowl, mix all the stuffing ingredients — tutti frutti, cherries, coconut powder, sugar, raisins, cashews, cardamom powder, and melted butter. Keep aside.

Shape the Dilkush

Divide the dough into a round ball. Roll it into a thick circular sheet.

Fill & Seal

Place the prepared stuffing evenly over the rolled dough sheet. Cover it with another rolled dough sheet and seal the edges properly. Lightly brush the top with milk and sprinkle sugar if desired.

Preheat the Oven

Preheat the oven at 180°C for 10 minutes.

Bake

Bake the Sorghum Dilkush at 180°C for 30 minutes, or until the top turns golden brown.

Cool & Serve

Remove from the oven, allow it to cool slightly, slice, and serve as a soft, sweet, baked millet snack.
