Sorghum flour pairs well with ghee and semolina, creating a crisp yet light bite.
Sorghum flour – 1 cup
Sorghum semolina (suji) – 2 tsp
Maida (all-purpose flour) – 1 cup
Ghee – 3 tsp
Salt – ½ tsp
Hot oil – a small quantity (for dough)
Oil – for deep frying
Prepare the Dough
In a bowl, combine sorghum flour, maida, ghee, and salt. Add a small quantity of hot oil and mix well. Gradually add water and knead into a soft dough.
Add Sorghum Suji
Add sorghum suji to the dough and knead again. Cover and rest the dough for 30 minutes.
Shape the Gorimetteelu
Divide the dough into lemon-sized balls. Shape them manually and gently press in the center using fingers to create the traditional form.
Deep Fry
Heat oil in a pan. Fry the shaped gorimetteelu on medium flame until they turn golden brown and crisp.
Drain & Serve
Remove from oil and drain excess oil using tissue paper. Serve warm or at room temperature.
