Ingredients Required

For Millet Idli Batter

  • Sorghum idli rawa – 60 g

  • Wheat upma rawa – 40 g

  • Curd – 40 g

  • Eno fruit salt – 4 g

  • Salt – to taste

  • Water – as required

For Potato Stuffing

  • Boiled & mashed potatoes – 3

  • Green chilies – 3 (finely chopped)

  • Mustard seeds – ½ tsp

  • Turmeric powder – ¼ tsp

  • Red chilli powder – 2 g

  • Amchur powder – 2 g

  • Coriander powder – 2 g

  • Salt – to taste

  • Oil – 1½ tbsp

(Optional: sliced vegetables or mozzarella cheese for layering)

Preparation Method: Sorghum Idli Burger

A. Potato Stuff Preparation

  1. Heat oil in a pan and add mustard seeds. Allow them to splutter.
  2. Add chopped green chilies, salt, turmeric powder, red chilli powder, amchur powder, and coriander powder. Sauté for 1 minute.
  3. Add mashed potatoes and cook for 2 minutes. Switch off the flame and allow the mixture to cool.
  4. Divide the stuffing into lemon-sized balls. Gently flatten them into circular patties and keep aside.

B. Millet Idli Preparation

  1. In a large bowl, mix sorghum idli rawa, wheat upma rawa, and salt.
  2. Add curd and water to make a smooth batter. Rest for 5 minutes.
  3. Add eno fruit salt and gently mix.
  4. Bring water to boil in an idli steamer. Lightly grease the idli plates.
  5. Pour the batter into idli moulds, place them in the steamer, and steam for 15–20 minutes.
  6. Allow the idlis to cool slightly. Slice each idli horizontally into halves.

C. Assembling the Idli Burger

  1. Place a potato patty between two idli halves like a burger.
  2. Optionally add vegetables or cheese slices.
  3. Shallow fry the assembled idli burgers on a pan with a little oil until lightly crisp on both sides.
  4. Serve hot.
