Ingredients Required

  • Sorghum grains – 50 g

  • Milk – 100 ml

  • Curd – 2 ml (starter culture)

  • Sugar – as desired (for sweet lassi)

  • Cumin powder – as required (for jeera lassi)

  • Salt – as desired

Preparation Method: Sorghum Jeera / Sweet Lassi

A. Preparing Germinated Sorghum Powder

  1. Soak sorghum grains overnight. Wash thoroughly the next day.
  2. Transfer the grains to a damp cloth. Tie loosely and keep at room temperature.
  3. After 2 days, remove the sprouted grains and sun-dry them for 2 more days.
  4. Once completely dry, grind into a fine powder.
  5. Dry roast the germinated sorghum powder for 5 minutes on medium flame until the raw aroma disappears. Keep aside.

B. Preparing the Base

  1. Boil milk in a heavy-bottomed pan over medium flame.
  2. Add 5 g of germinated sorghum powder and cook for 10 minutes, stirring continuously.
  3. Remove from flame and allow it to cool slightly.
  4. Add curd culture to the mixture, mix well, and allow it to ferment overnight to form curd.
  5. Refrigerate the curd once set.

C. Making the Lassi

Sorghum Jeera Lassi

  • Add cumin powder and salt to the fermented mixture.

  • Stir continuously for 5–10 minutes to avoid lumps.

  • Strain, chill, and serve cold.

Sorghum Sweet Lassi

  • Add sugar to the fermented mixture.

  • Stir continuously for 5–10 minutes until smooth.

  • Chill and serve.
