Kulfi is one of India’s most loved traditional desserts — rich, creamy, and full of nostalgic flavor. This Sorghum Kulfi recipe gives the classic treat a healthy millet-based makeover by using sorghum milk along with regular milk.

Ingredients Required

  • Sorghum milk – 100 ml

  • Regular milk – 100 ml

  • Milk powder – 50 g

  • Sugar – 30 g

  • Corn flour – 10 g

  • Cardamom powder – ½ tsp

  • Citric acid – a pinch

  • Cashews – 10 g (chopped)

  • Almonds – 10 g (chopped)

  • Pistachios – 10 g (chopped)

Preparation Method: Sorghum Kulfi

Soak & Grind Sorghum
Soak sorghum grains overnight. Grind them with water to extract sorghum milk.

Extract the Milk
Strain the ground mixture using a muslin cloth to extract smooth sorghum milk. Keep aside.

Prepare the Kulfi Base
In a pan, add sorghum milk and regular milk. Heat gently on low flame.

Add the Thickening Mix
In a bowl, mix milk powder, sugar, corn flour, cardamom powder, citric acid, and chopped dry fruits. Add this mixture to the warm milk and cook slowly, stirring continuously.

Cook to Thick Consistency
Cook the mixture until it thickens to a creamy kulfi consistency. Switch off the flame and allow it to cool.

Fill the Moulds
Once cooled, pour the mixture into kulfi moulds.

Freeze Overnight
Freeze the moulds overnight or for at least 6–8 hours until set completely.

Serve & Enjoy
Demould and serve chilled as a healthy, delicious millet-based dessert.
