Sorghum flour blends smoothly with butter and eggs, giving muffins a tender crumb and rich taste.
Sorghum flour – 15 g
Maida (all-purpose flour) – 15 g
Butter – 100 g (softened)
Sugar powder – 100 g
Eggs – 2
Baking powder – 3 g
Salt – 1 g
Chocolate chips – 6 g
Vanilla essence – 5 ml
Food-grade yellow colour – a pinch
Prepare the Dry Ingredients
Sieve sorghum flour and maida separately. Combine them with baking powder and salt. Keep aside.
Beat the Eggs & Sugar
In a mixing bowl, beat eggs using a mixer or hand beater for 5 minutes. Add sugar powder and continue beating until the mixture becomes light and fluffy.
Add Butter & Flavouring
Add softened butter, vanilla essence, and a pinch of food-grade yellow colour. Mix until well combined.
Incorporate the Flour
Gradually add the prepared flour mixture to the batter. Mix gently for about 10 minutes until smooth.
Add Chocolate Chips
Fold in the chocolate chips evenly.
Fill Muffin Moulds
Line muffin trays with paper cups. Pour the batter into moulds, filling them about ¾ full.
Preheat the Oven
Preheat the oven at 180°C for 15 minutes.
Bake the Muffins
Bake the muffins at 180°C for 25 minutes, or until a toothpick inserted comes out clean.
Cool & Serve
Remove from oven and allow the muffins to cool for 30 minutes before serving.
Serve with tea, coffee, or milk
