Sorghum Mysore Pak Recipe: A Traditional Sweet with a Healthy Millet Twist

Mysore Pak is one of South India’s most iconic sweets — known for its rich ghee aroma, melt-in-the-mouth texture, and festive significance. This Sorghum Mysore Pak recipe brings a modern millet-based upgrade to the traditional sweet by blending sorghum flour with besan.

The result is a dessert that retains the authentic taste and texture of classic Mysore Pak while offering the goodness of millets. Ideal for festivals, gifting, or special occasions, this recipe shows how tradition and nutrition can come together beautifully.

Why Use Sorghum in Traditional Sweets?

  • Naturally gluten-free grain

  • Rich in dietary fiber

  • Adds structure without heaviness

  • Balances indulgence with nutrition

  • Perfect for festive millet desserts

Sorghum flour blends smoothly with besan, giving Mysore Pak a rich yet slightly lighter finish.

Ingredients Required

  • Sorghum flour – 100 g

  • Besan (gram flour) – 100 g

  • Ghee – 100 g

  • Oil – 100 g

  • Sugar – 250 g

Preparation Method: Sorghum Mysore Pak

  1. Heat the Fats - In a large kadai, add ghee and oil. Heat gently and keep ready on low flame.
  2. Prepare the Flour Blend - In a bowl, mix sorghum flour and besan thoroughly to form a dry blend. Keep aside.
  3. Prepare Sugar Syrup - In another kadai, add sugar and a little water. Boil until the syrup reaches one-string consistency.
  4. Add Flour Gradually - Reduce the flame to very low. Add the flour blend little by little, stirring continuously to avoid lumps.
  5. Stir in Batches - Continue adding the flour blend in 3–4 batches, ensuring the mixture remains smooth.
  6. Add Hot Ghee-Oil Mixture - Take a ladleful of hot ghee-oil mixture and pour it over the flour mixture. Stir continuously until fully absorbed.
  7. Repeat & Cook - Repeat this process 4–5 times until the mixture thickens and starts separating from the pan.
  8. Set the Sweet - Immediately transfer the hot mixture into a greased tray of sufficient depth. This helps even cooking and color development.
  9. Cut & Cool - After 5 minutes, cut into desired shapes. Allow to cool for 30 minutes, then separate the pieces.
  10. Serve & Enjoy - Serve Sorghum Mysore Pak as a rich, millet-based festive sweet.
